Okay folks, by now you know that I don’t do recipes. But today I am breaking my rule because this potato soup is awesome and what I’m making for dinner tonight. To be clear, this is my sister’s recipe-she taught me how to make it, and she even gave me permission to blog about it today. So let’s go!
What you need:
Enough potatoes to feed your peeps (I use around six, but I need to reduce that number because it’s too much for two)
A stick of butter
A container of unsweetened soy milk
Half an onion
Celery or corn or some other delightful vegetable, or perhaps bacon
Instant potato flakes or pearls to thicken at the end
- This is the key…you MUST season this soup or else it’s just wet potatoes in your mouth. Amounts of seasonings are variable. Just use your taste buds as a guide.
Salt to taste
Dash of allspice
About a tablespoon of sage
1 bay leaf
Pepper to taste
Garlic to taste
Dash of parsley
Dash of rosemary
How it’s done:
Wash and chop potatoes into smallish cubes and add to boiling water. Mince onion (more or less 1/2 of a small yellow one) and add it to the boiling potato pot. Boil until potatoes are about 3/4 the way done.
Strain out water until you have about 1/4-1/3 of the original amount. The water should be about an inch below the potato line.
Add a stick of butter to the potato/onion/water mix. If you have chosen celery or corn or some other delightful vegetable, chop it up into small pieces and add it to the mixture now, or add bacon for a meaty flavor.
Bring water back to boiling. Then add somewhere between 1/2 to the full container of soy milk and all your seasonings. Stir frequently to prevent scorching and over boiling . Stir until the seasonings have permeated the soup and the milk is boiling softly. By now the potatoes should be fully cooked and the butter all melted. Remove from heat. Add potato flakes or pearls until thickened to taste.
Now let it cool down a bit and serve it up. Enjoy! This soup goes great with salad or crackers or biscuits. Or think of your own side and make it especially yummy!
